🌿 Fresh Basil Pasta – A Simple, Garden-Fresh Weeknight Delight
Do you have fresh basil growing in your backyard, patio, or even indoors on a sunny windowsill? This vibrant pasta dish, originally from the Martha Stewart website, is quick, easy, healthy, and wonderfully fragrant.
I’ve cooked this several times and adjusted it slightly to suit our kitchen. You may need a little experimentation at first, but soon you’ll find the rhythm and make it your own.
🍝 Ingredients (My Version)
- 6 oz linguine or other pasta
- A handful of cherry tomatoes, halved
- 1 small onion, thinly sliced
- 1 clove garlic, smashed
- A good pinch of salt
- A generous handful of fresh basil leaves (homegrown if possible)
- Optional: Olive oil, grated Parmesan
👨🍳 Method
- Place the pasta in a wide pan — I use my trusted All-Clad — and cover with cold water just to the level I know from practice (you’ll learn your ideal amount after a few tries).
- Add the onions, tomatoes, garlic, salt, and basil right from the start.
- Bring everything to a boil over medium-high heat.
- Once the water is boiling, watch it closely. As the pasta softens and absorbs the liquid, you may need to ladle off excess water. I do this with a Pyrex measuring cup.
- Taste the pasta as it cooks. If it’s al dente and there’s still too much water, remove more. Rarely do I need to add more water.
- When it’s just right, drizzle a little olive oil if needed, stir, and top with freshly grated Parmesan.
- Serve straight from the pan and enjoy immediately.
🍷 Wine Pairing
A fragrant, herby pasta like this pairs beautifully with a light red wine. My go-to is a GSM blend (Grenache, Syrah, Mourvèdre). One great choice is the Bertrand “2020 Gerard Bertrand Corbières“ — fruit-forward with enough structure to complement the tomato and basil flavors.
